Chef Nathan Davies uses the principles of Sustainability, Produce, Locality, and Flavour to create exceptional dishes using the best possible produce from Aberystwyth and the surrounding areas.

SY23 is run by Nathan and Hollie Davies, along with Mark and Rhian Phillips. Mark, who has worked in the licensed trade for many years, takes personal responsibility for the wine list and pairings, while Rhian, a former headmistress, handles the operational side of the business.
Nathan's journey to becoming a Michelin-starred chef began at the age of 14, working part-time in kitchens. After attending catering college, he worked in London and at a country house hotel in Powys before travelling to France to broaden his culinary influences. He returned to Wales and worked at The Hardwick and Ynyshir before opening SY23 in 2020 with a small team, focusing on the amazing produce available locally. Within two years, the restaurant was awarded its first Michelin star, along with a special award for Opening of the Year.
